• use ingredients & products which are grown sustainably and are minimally processed
  

• frequent Farmers' Markets and work with local farmers who supply us with what’s best, fresh and in season
  

• use natural, local and hormone-free meats
  

• create baked goods with sustainable & organic flours, sugars, cocoa, fruit and nuts and cage-free eggs
  

• feature Stumptown coffee
  

• offer locally bottled individual and bulk spring water
  

(recycling & minimizing waste)

• send out containers for recycling
  

• offer real plates and cutlery on our drop-off breakfast and lunch service (group size permitting) at no extra charge to reduce paper waste
  

• use compostable sugarcane paper products, compostable corn-based plastic hot and cold cups, and compostable potato-based plastic utensils
  

• use recycled-content and unbleached napkins
  

• use phosphate-free dish soap
  

• participate in City of Portland’s composting program for both kitchen and post-event composting
  

• recycle all paper, cardboard, cans, bottles and plastic
  

• donate extra food to a homeless shelter
  

(energy & purchasing)

• kitchen has with sodium vapor lighting, gas water heating and gas-powered and Energy Star rated equipment
  

• participate in the Green Source Renewable Power program for electric energy (all of the electricity billed for is 100% renewable and generated from wind, geothermal and biomass power)
  

• annually purchase Carbon Offsets from the Bonneville Environmental Foundation (a purchase of a renewable energy certificate to offset the carbon emissions from our daily operations which supports the development of renewable energy, solar power systems, wind power systems and watershed restoration)
  

• use business cards and brochures with the highest amount of post-consumer recycled material possible soy-based inks
  

• use email whenever possible instead of fax or standard mail
  

• have company t–shirts which are locally screened onto sweatshop-free t-shirts
  

• use a bio-diesel van for our main delivery vehicle
  

• produce our tradeshow signage on ecoboards rather than foam core boards
